Dairy-free and Egg-free Vegan Oatmeal Spice Cookies Recipe


I was having a craving for oatmeal cookies, and my daughter is vegan, so since she was home and I knew she would want some I needed to make them dairy and egg-free.

The easiest thing to do when you’re looking for a vegan baking recipe is to start with one that uses oil, not butter.

The changes that I made to my basic recipe were pretty limited since it didn’t have butter or eggs to begin with. 

I switched the milk out for oat milk, which was the main difference.

I also add a little extra flour and beat the batter longer than I usually would for cookies, because that will increase the gluten. 

The increased gluten takes the place of some of the structure that you lose when you take out the eggs.

Vegan Oatmeal Cookies

Equipment

  • 1 mixing bowl or stand mixer
  • measuring cups and spoons
  • 1 rubber spatula
  • 1 small ice cream scoop or teaspoon
  • Parchment paper
  • 2 cookie sheets
  • 2 Cooling racks

Ingredients
  

  • 2 cups packed light brown sugar
  • 3/4 cup vegetable shortening
  • 1/2 cup oat milk
  • 4 cups quick cooking oatmeal
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 375°F. 
  • Prepare cookie sheets lined with parchment paper.
  • In a large bowl, beat the brown sugar, shortening, and vanilla until they're well-combined.
  • Add the dry ingredients and mix until well-combined.
  • Make rounded tablespoonfuls or use a small ice cream scoop to form the dough into balls.
  • Place the dough balls on the lined cookie sheets about 2" apart.
  • Bake for 10 minutes or until set. Remove them from the cookie sheets right away by sliding the parchment paper off of the cookie sheets onto a cooling rack.
  • DO NOT OVERBAKE! The cookies will continue to set as they cool. Overbaking will make them too crispy.
  • When the cookies have cooled for a few minutes, remove them from the parchment and put them directly onto the cooling racks to cool completely.
