This sunflower butter recipe for no-bake chocolate snack balls are really easy to make, only have four ingredients, and they’re gluten-free, nut-free, and full of fiber. If you use the chocolate Sunbutter that I did, they’ll also have a nice chocolate flavor, but you can use the regular if you prefer.
These are like little balls of cookie dough, but since there’s no egg in them you don’t have to worry about baking them. They’re not great for being transported around because they’re pretty crumbly, but you can keep them in the fridge until you’re ready for a little snack.

Sunbutter ingredents.
The ingredients in plain Sunbutter are sunflower seeds, salt, and that’s it. You can get different flavors of it that will have additional ingredients if you want a sweeteened or flavored variety.
I used chocolate Sunbutter for this recipe, and it has added unsweetened chocolate, cocoa powder, vanilla, and cane sugar. It’s still gluten-free, nut-free, and vegan even with the added ingredients.
Ingredients for the no-bake snack balls.
To make these, you’ll need the following ingredients that you can get on Amazon (all links are affiliate links.)
- 1/2 cup chocolate Sunbutter
- 1/2 cup quick cooking oatmeal
- 1/2 cup flaxseed meal
- 1/4 cup light brown sugar or 2-3 Tbsp honey
That’s it! I prefer the brown sugar, but if you use honey they’ll stick together better. I prefer the flavor of the brown sugar, though.
I’ve estimated that these have 70-75 calories in each one as long as you use the #70 scoop, which is about 1 ounce.
How to make the no-bake snacks.
Put all of the ingredients in a bowl and stir them together with a strong spoon or spatula. This mixture is dry, and you’ll probably need to finish the mixing by kneading the ingredients together by hand.
If you want to add some honey or water to moisten the mix you can do that, it could make them stick together easier. The more you mix it the damper it will get because the oils in the flaxseed meal will start to combine with the other ingredients.
Shaping the balls.
When you have the ingredients completely mixed, scoop out balls using a #70 scoop (a small meatball size) and put them on a cookie sheet or a plate. You won’t be baking them like cookies, but you’ll want to put them in the fridge to cool off and harden up a little.
This is where you might want to add some honey or water to help them form into balls better. The mix is pretty dry, but they stick together better after they’ve been in the fridge.
If you don’t have a scoop, you can use your hands to form small balls.
These are going to be crumbly and they’ll going to fall apart if you try to pick them up, so try to leave them alone once you have them on the sheet!
Storing the snacks.
Once you have them all on the sheet, put it in the fridge and let them cool off. I grab one when I want a little sweet snack, and because they’re basically all fiber it’s not as bad as eating candy even though it has a chocolate flavor.
You can put them in a lidded container, or just leave them on the cookie sheet or a plate, uncovered. They won’t last very long either way, it’s too easy to grab one for a quick snack.
Since they have so much fiber in them, they’re surprisingly chewy, and it feels like you’re eating more than the bite-sized piece. They’ll satisfy your sweet tooth pretty well!
