Tips for making wafer paper wings:
- Think about the size of the finished wing, then make the base piece of wafer paper about 2/3 that length.
- Use a cake dummy that the same as the finished cake to estimate the size as you work on the wings.
- If you want to add a dowel to the center of the wing, you can do that at the end by wrapping the final row of feathers around the dowel. Use the dowel to insert into the cake after the wing is totally dry.
- Don’t worry too much about the number of feathers you use, just make sure that the wing looks full and even.
- You can also use an edible cake wrap that’s attached to the cake to attach the wings to if you want to have them curving around the tier.
- If the wing is too big, you can trim it by cutting it off, then re-shaping the tips of the feathers.
- Attach the feathers to the base with piping gel to avoid wetting the base too much. If it gets too wet it will soften up and it won’t support the weight of the feathers as you layer them.
- Make sure that the wings have time to dry completely before you place them on the cake!
